Tiny Potato Casserole

This makes a HUGE amount. You may wish to halve the recipe.
2 lbs of Fingerling or Baby potatoes
16 oz Mushrooms
16 oz Morningstar Steak Strips (or other fake meat)
4 Cloves Garlic
1-2 Medium Onions
2 pinches each of Oregano and Thyme
Salt and fresh ground black Pepper
5-6 tbsp Olive Oil
Maybe some Worcestershire sauce? Angostura makes veg Worcestershire sauce.
Cut any large Potatoes to about the size of a Mushroom. Quarter the Mushrooms. Chop Onion, Press Garlic. Cut the Steak Strips to about 1" long.
Put it all together in a large enough pan. Add Thyme and Oregano, Salt and Pepper and Oil. Mix it up with your hands.
Put it in the oven at 375°. Stir every 15 minutes until the Potatoes are tender. Cook for about 45 minutes.
Top with shredded Cheddar if you like.
