Sicilian Special Broccoli Rabe



1 Bunch Broccoli Rabe
1 Lb Gimme Lean Sausage
1/2 Lb sliced Mushrooms
4 Organic Free Roaming Eggs
2-3 Cloves Garlic chopped or pressed
1 Cup shredded Mozzarella Cheese
4-5++ Tbsp Olive Oil (Make it as oily as you wish. Consider that if you had used real sausage, it would be Super oily!! (Pig Fat. Poor innocent porcine friends.))
Crushed Red Pepper

Wash the Broccoli Rabe and cut into 2-inch pieces.
Blanch Broccoli Rabe in salted boiling water for a couple minutes. Drain.

Mix the Gimme Lean with some sage and oregano. Put 2 Tbsp olive oil into a 12" pan. Flatten the Gimme Lean into the pan and fry until browned. You should end up breaking up the 'sausage' as it cooks. Break it up into reasonably sized pieces.

Remove the 'sausage' and saute the Mushrooms and Garlic.

Add back the 'sausage' and Broccoli Rabe. Stir it up.

Beat the Eggs and add to the saucepan. Evenly.

Cook covered over medium heat turning the pan as necessary until the eggs seem done.

Put the mozzarella over the top evenly. Melt the cheese. Optionally, sprinkle with pepper flakes.
